White gazpacho with grapes and roasted almonds

  1. Save 1 cup of chopped cucumbers for garnish. Soak bread in water until soft, about 2 minutes. In a food processor bowl, place the soaked bread, leftover cucumber, garlic, 3 onion stalks, vinegar, lemon juice, 1/4 tbsp. almonds, salt, 3 tbsp. l. olive oil and beat until the cucumbers are completely chopped and the liquid and almonds are almost invisible, about 1-2 minutes. Add more salt and vinegar if desired. To serve, place 1 cup gazpacho in a bowl. Spread out 1/4 tbsp. left chopped cucumber, a tablespoon of green onions, 2 tbsp. l. grapes and a teaspoon of almonds in the center of the soup bowl.
