White Mushroom and Champignon Soup

Simple, and at the same time, a win-win dish at any time of the year.

Ingredients

  1. Peel all the vegetables for the broth (carrots, onions, stalk and celery root), chop as desired and lightly fry in vegetable oil.
  2. Put dry porcini mushrooms in a saucepan, add water, bring to a boil. Add fried vegetables. Reduce heat and cook, not boiling, for 1 hour 30 minutes.
  3. For garlic croutons, fry black bread in vegetable oil on both sides for one minute. Put on a paper towel, rub with a clove of garlic, salt.
  4. Serve the soup in a deep bowl, lay out crispy croutons and two dressings: horseradish and sour cream on a separate plate.
