Wild rice in coconut sauce

  1. Rinse wild rice in cold water and place in boiling water, 1 cup rice to 2–2.5 cups water. Cook over low heat for about 40 minutes.
  2. Peel a 3 cm piece of ginger, chop the tomatoes and combine with lime juice and coconut milk in a blender.
  3. Put the cooked rice (the grains are soft and slightly open) in a hot skillet with a little olive oil. Pour the cooked coconut sauce, add salt and simmer over low heat for 10-15 minutes. The rice gradually absorbs the sauce and opens up even more.
