  1. Chop the onion and fry in oil, stirring constantly, for 1 minute. Add 1 cup water and vinegar and bring to a boil, stirring occasionally, until the onions turn pink.
  2. Drain the liquid into a separate container and top up with water so that you get 2.5 cups of broth. Bring this liquid to a boil in a saucepan, add rice and cook over low heat, covered, for 30 minutes. Then add the onion and cook for another 4 minutes.
