  1. Pre-cool the mineral water and katyk (or yogurt) for at least 1 hour.
  2. Pour the katyk into a deep wooden, porcelain or earthenware dish, whisk thoroughly with a whisk until smooth, then add sugar or salt to taste and beat again.
  3. Whisking continuously, pour cold mineral water into the fluffy mass from the katyk in a thin stream. Ayran should be frothy and effervescent.
  4. Pour the finished ayran into tall glasses and place on a plate with crushed ice.
