Zucchini Latkes with Goat Cheese

A delicious combination of zucchini, green onions, mint (the more the better!) And goat cheese.

  1. Peel the zucchini and grate on a coarse grater. Peel and chop the green onions. Combine together, add salt. Chop the dill and mint, mash the cheese with a fork.
  2. Add greens and cheese to the zucchini, season with pepper, mix. Add eggs, sifted flour, knead the mixture until smooth.
  3. We start frying: we form small balls, slightly flattening them - it is better to do this with wet hands. Fry on both sides until golden brown, 3 minutes on each side. Serve warm with sour cream or Greek yogurt.
