  1. Prepare the zucchini for garlic pancakes. Wash them first and pat dry with a paper towel. If the zucchini is young and the skin is tender, do not peel the fruit.
  2. Grate the zucchini on a coarse grater, add a little salt and mix. Let sit for 10 minutes, then fold in a colander and squeeze. Transfer to a large bowl.
  3. Wash cilantro for pancakes with garlic, pat dry well on a paper towel, and then chop finely. Peel the garlic, crush the cloves and chop finely.
  4. Lightly brown the pine nuts in a dry skillet and let cool. Add eggs, two-thirds of cilantro, garlic and pine nuts to a bowl of squash. Stir.
  5. Add flour, add olive oil. Season with salt and pepper to taste. Knead the squash and let it rest for 5 minutes at room temperature.
  6. Heat the pan. Pour in a small amount of oil. Put the resulting squash mixture with garlic in small portions in the pan. Fry until browned.
  7. Turn the food over and fry on the other side. Also make pancakes from the whole dough. If necessary, they can be brought to readiness in the oven or in a skillet under the lid over low heat.
  8. For the zucchini pancake sauce, stir the natural yogurt or yogurt with the remaining cilantro. Season with salt and pepper. Serve with the garlic zucchini pancakes.
