Zucchini Sticks in Crispy Breading

In all dishes, in all types, in any season, we love zucchini so much. Especially small, tender, with thin skin and invisible seeds, fresh from the garden.

  1. For the sauce, finely chop the cilantro and garlic. Mix with yogurt and olive oil. Whisk and season with salt. Leave to brew while the zucchini is cooking.
  2. Cut the zucchini into 6–8 cm pieces. Cut each piece lengthwise into strips 8 mm thick, and then into cubes, as for french fries. Blot them with paper towels to remove excess moisture.
  3. Place prepared courgettes in a large plastic bag, add flour, starch, salt and freshly ground black pepper. Shake the bag well to distribute the flour evenly.
  4. In a bowl, beat the egg until smooth. Combine bread crumbs, finely grated hard cheese and a pinch of dry thyme on a large plate. Dip each block into an egg and then into the resulting mixture. Shake off excess and transfer to wire rack. Repeat with the remaining sticks. They need to be laid out at a short distance from each other - then they will turn out to be crispy.
  5. Bake in the oven at 200 ° C until tender, 10-15 minutes. Serve immediately, with sauce, with grilled meat or steak.
