You should peel the celery before eating it – regardless of whether you dip it or prepare it as an oven vegetable. The interior of the perennials and the hard threads are particularly important. We’ll show you how to remove them.

Clean and peel the celery

1. Trim celery:
First you separate the stems from each other and remove the leaves inside the celery.
Then cut off the bottom ends of the perennials. It is best to remove everything white to avoid bitter substances.
You should also cut off the top ends once they have dried.
2. Wash Celery:
Now you can wash the celery to get rid of dirt: make sure to also remove the dirt from the grooves and clean the celery thoroughly.
Hot water and a vegetable brush are best for this.

3. Peel the celery

After cleaning, you can remove the hard fibers. You can use either a knife or a peeler to do this:
Use the knife to cut about 1mm into the celery and then pull off the thread between the knife and your thumb.
If you use a vegetable peeler, you’ll remove the threads just as effectively. However, you will also remove much of the edible celery.
Tip: Basically, when peeling and cleaning celery, you can proceed in a similar way to rhubarb. If you are used to peeling rhubarb, it is also very easy to peel celery.

Once you have washed and peeled the celery, you can eat it as finger food with a delicious dip, or fry, steam or cook a celery soup.

Celery belongs to the umbelliferae and originally comes from the Mediterranean region. The wild form did not yet have a tuber or stalk, but the leaves of the plant were already being used in ancient times. In the meantime, around 30 different varieties have been bred. The most common are:

Celery has a long tradition, particularly as a soup vegetable. However, the plant can do much more than flavor our soup. The tuber, stem, leaves and seeds contain many healthy nutrients. The most important include:

Why you should eat a lot of celery

Already in ancient Egypt, celery with its numerous ingredients was recognized as a medicinal plant and used, for example, against gout, rheumatism, digestive problems, inflammation and depression.
In traditional Chinese medicine, celery is still used today, among other things, as a remedy for high blood pressure and in Ayuvedic medicine, for example, against dementia.
Studies have shown that celery can actually be so beneficial to health. The anti-inflammatory ingredients and antioxidants also benefit the cardiovascular and immune systems, and the apigenin found in celery may even prevent and treat cancer.
Due to the high potassium content, the plant has a detoxifying effect and can help with bladder and kidney problems.
Celery also contains a lot of fiber and is very low in calories, which is why the vegetable is also popular for weight loss.

Eat celery raw – that’s why it’s worth it

It is therefore worth adding celery to your diet regularly. The tuber, stalks and leaves can be steamed, baked, fried or boiled. However, you should bear in mind when preparing it that many of the valuable ingredients are lost when it is heated. Up to 41 percent of heat-sensitive vitamins and minerals can volatilize.

In order to be able to absorb all nutrients, it is therefore healthiest to eat celery raw. Peeled celery sticks are best for this. For example, raw celery tastes delicious in salads, as a snack between meals or with delicious dips.

A freshly prepared juice is also a delicious way to eat celery raw. It helps to detoxify the body, balances the water balance and brings new energy and electrolytes after exercise or a hard day.

Thanks to the high magnesium content, the juice also has a calming effect on the nervous system and can help you fall asleep.

Juice cleanses are becoming more and more popular, because on the one hand they promise to be a relaxation cure for the stomach, since no solid components have to be digested, and on the other hand they entice with a lot of vitamins. In most cures, whether homemade or bought ready-made, fruit and vegetable juices are combined and varied. For a juice cleanse that focuses on a single vegetable, celery excels. That’s why celery is so healthy

For a long time, celery had a rather inconspicuous existence as a soup vegetable, and for a long time the most exciting thing that was done with a celery stalk was to stir a Bloody Mary with it. Celery is full of vitamins and minerals.

For a juice cure, celery (also celery or blanched celery) is primarily used. Many nutrients are found in both the stems and leaves. However, the leaves are usually a bit bitter and if you dare to approach vegetable juices in general, then you should approach the amount of leaves slowly.

Almost forgotten medicinal plant

Celery was considered a medicinal plant in the past and was used to treat all kinds of ailments.
And in the gastrointestinal tract, celery is said to work wonders for some. What is definitely true is that celery juice is a source of potassium and vitamin K1 and is high in protein.

Celery cleanse, how it works

For a celery cleanse, you will need to make fresh celery juice or use a ready-made juice cleanse. Otherwise, the handling is very simple:

Drink around 500 ml of celery juice every morning on an empty stomach
Wait half an hour (don’t eat or drink anything) so that the celery can really look nice
Eat a varied and balanced diet for the rest of the day
So you do a celery cure in addition to your usual diet. You eat normally, but start the day with a celery juice on an empty stomach. This makes it easy to integrate a lot of liquid and vitamins into your morning routine.

Wanda’s experience diary on the celery cleanse

Day 1 – Celery has a surprising taste

Full of enthusiasm, I shook the celery juice properly and took a large sip straight from the bottle. I was actually a bit shocked about the taste, because it was relatively bitter at first and I realized again why I eat celery so rarely. I just kept drinking the juice in small sips, so in 15 minutes the bottle was empty and my stomach was filled for the time being. So the first pleasant effect was that my stomach was already full and I was neither thirsty for coffee nor hungry for breakfast. In fact, I ate two handfuls of nuts in the morning and was well taken care of until lunch.

Day 2 – Sweeten or not?

Now that I was prepared for the taste, I had considered in advance whether I would “sweeten” the celery juice with some apple juice. I had read that as a tip during my research if the pure celery juice was still taking some getting used to. However, since the health benefits only fully unfold if you actually drink the juice pure, I stayed with the pure version. In small sips it worked well and this morning 1 apple was enough for me until lunch

Day 3 – I’m looking forward to the vegetable power

As soon as I got up, I thought about the celery juice and I was almost looking forward to it, because so many vegetables in the morning are a good start to the day and you’ve already eaten 2-3 portions of vegetables. As a big believer in positive affirmations, just the thought of drinking so many veggies did me good.

Day 8 – Routine that brings energy

By now, celery juice has become routine. I have the feeling that I’m more energetic in the morning – I don’t know whether it’s because of the amount of vegetables and thus the vitamin boost or because my stomach has to work less without solid food components and the energy is therefore available elsewhere. I guess it’s the combination of both points.

Bottom up! I have to say, in the meantime I even find the celery juice delicious and the bottle was drunk in no time.

Celery is a versatile and healthy vegetable. There is celeriac and celery. For celery juice, use celery sticks, also known as celery sticks, and they are in season from May through November. The oils and the bitter substances they contain are also said to support digestion, calm the stomach and counteract slight stomach pains.

Make celery juice yourself: ingredients for the recipe

You can easily make celery juice yourself at home. For a serving of about 350 milliliters of juice you need:

about 400 g fresh celery
a blender/blender/juicer
a strainer and filter cloth or nut milk bag (to strain out the solids after pureeing if you don’t have a juicer)
If you like, you can refine the pure celery juice with other seasonal vegetables or fruit. Just try what you like best. Go very well with celery juice:

Lemons
carrots
Parsley and other green herbs

Making celery juice: The preparation

How to prepare the celery juice:

Remove the stalk.
Peel and trim the celery stalks.
Cut the stalks into pieces about 2 centimeters in size. If you work with a juicer, the pieces can stay longer (depending on the model).
Blend the celery (and optional other ingredients) in the blender on high until fairly runny. Depending on how you feel, you can add about 100 milliliters of water. You can do the same thing when you work with a hand blender. If you have a juicer, skip this and the next step.
Strain the pureed celery through a filter cloth or strainer to get the pure juice.
It is best to drink the fresh celery juice immediately.
If you don’t drink it right away, you can store it in a sealed container in the fridge for about 24 hours.

Celeriac and celery are two varieties of the same species – the “true celery”. While they look quite different, both have the distinctive celery aroma. However, celeriac tastes a little more intense than celery.

Both varieties are low in calories and contain many healthy nutrients:

vitamins B1, B2, B6 and C
various minerals, especially potassium
secondary plant substances
Celery is one of the vegetables that you can get from German cultivation for many months. Since celeriac can be stored very well, you can even get it all year round. The season of stalks and celeriac starts in May and July respectively and lasts until November.

If possible, buy celery from organic farms, as they do not use chemical-synthetic pesticides. You can tell freshness from celery by the fact that the stalks are crisp and cannot be bent. Otherwise, you should make sure that there are no rotten spots on either type of celery.

You can store celeriac in the vegetable compartment of your refrigerator or in the cellar for weeks. However, you should prepare celery early. It will keep in the vegetable drawer for a maximum of two weeks before it becomes soft.

Tip: In season, you can sometimes buy celeriac with the greens. The leaves have an intense celery flavor – you can freeze them chopped up and use them gradually to flavor dishes.

Cooking celery: You have these options

Before preparing it, it is advisable to peel and clean the celery. If you don’t mind the slightly fibrous texture of the peel, you can leave it on. It gets softer when you cook it anyway. You can also use the leaves of the celery.

You can eat celery raw. The easiest way is to eat the stalks whole with a dip. But the crunchy vegetables are also good for salads and smoothies.

You can also cook celery. In Italy, celery is even part of the soup greens, called sofrito. If you cook celery longer, it becomes milder and is suitable as an ingredient in many soups and stews.

Cook Celeriac: Raw and Cooked

Celeriac also tastes good raw – but since it is quite hard, it is best to grate it finely for salads. A classic salad with celeriac is the Waldorf salad. In addition to celeriac, it contains apples, onions, a mayonnaise dressing and walnuts.

Cooking celeriac is more common. In this country it is part of the soup greens and thus the basis of many soups, stews and broths. Before you prepare the celeriac, you usually peel it and cut it into small cubes. Celeriac only takes about 10 to 15 minutes to cook.

Tip: Prepare our celery soup or a potato and celery puree, for example.

For a celery schnitzel, on the other hand, cut the peeled celeriac into thick slices and cook them for about ten minutes until al dente. Then you drain them well, bread them and fry them.

You can also cook celeriac whole in the oven with the skin on. This is not a typical preparation method – but one that is worthwhile: At some point the sugar under the skin of the celery begins to caramelize and provides delicious aromas. Below we show you a recipe for baked celeriac. It is quite time-consuming and uses a lot of energy and is therefore more suitable for rare occasions. Since the celery only tastes faintly of celery after the long baking time, you can also use it to convince some celery skeptics.

The baked celery is so aromatic that you can prepare it on its own or with some crème fraîche. But it also goes very well with Asian dishes.

Cook celeriac: recipe for baked celery

Ingredients:

1celery (approx. 1 kg)
4 tablespoons olive oil
1 tsp salt

Directions:

Remove the roots of the celery, then wash and trim it thoroughly.
Prick the celery evenly all over with a fork and place it on a baking sheet lined with baking paper or an ecological substitute for baking paper.
Mix the oil and salt together and rub all over the celery root.
Place the tray in the oven and bake the celery at 170 degrees for about two and a half hours. Celery juice leaks out when baking. Sprinkle the bulb with it about every 20 minutes. When the juice turns brownish, the sugar in the celery has started to caramelize.
Take the tuber out of the oven and let it rest for 10 to 15 minutes. Then cut them into slices (the bulb should be buttery soft) and spread the cut surfaces with the celery caramel. Now you can briefly grill the wedges in the oven if you want to brown the cut surfaces as well. Or you can enjoy the prepared celery directly.

Celery is a versatile vegetable that you can use in a variety of ways in the kitchen. Especially with celeriac, there are often leftovers because the tubers are very large. You can freeze leftovers like this. We explain what you should pay attention to.

Freeze celery: how it works

You can freeze celeriac raw or cooked very well. To freeze it raw, proceed as follows:

Peel the celery. It is best to cut the peel half a centimeter thick with a sharp knife.
Slice the celery and further into sticks or cubes depending on your taste and later use. You decide how coarse or fine you cut it – depending on what you want to use it for later.

If you wish, you can also cook the prepared celery before freezing. Then all you have to do is heat it up after defrosting. After cooking, allow the cooked celery to cool completely. Then you can freeze it in portions just like the raw celery.

Raw celery can be frozen for up to six months, cooked celery just three.

Special case celery

Unlike celeriac, you should always blanch celery sticks before freezing. This makes it last about six times as long. Thats how it works:

Clean the celery: Cut off the stalk and leaves and remove the threads. Then you wash the vegetables.
Cut the celery into the desired shape and size.
Put a large pot of boiling water on and prepare a large bowl of ice water.
Add the celery to the boiling water and let it cook for 3 to 4 minutes.
Then scare him in ice water.
Drain the celery thoroughly and let it dry completely. Then freeze it in portions as described above.
Blanched celery can be stored frozen for up to a year. If you freeze it raw, it will only keep for two months.
