Accordion potatoes with vegetables

Delicious and aromatic potatoes for a side dish for a festive table can be prepared according to this recipe.

  1. Wash and dry the potatoes. Slice the potatoes with an accordion, without cutting to the end. Use long bamboo sticks, placing the potato tuber between the two.
  2. Wash the tomato, cut it in half and then cut each half into thin slices.
  3. Insert a slice of tomato into each cut of the potato. Place the potatoes in an ovenproof dish.
  4. Disassemble the broccoli and cauliflower into inflorescences, wash and place in a mold around the potatoes.
  5. Set aside one slice of grapefruit, squeeze the juice out of the rest. In a bowl, combine grapefruit juice, soy sauce and olive oil.
  6. Drizzle the dressing over the vegetables
  7. Season with salt and pepper, add ground coriander.
  8. Cut a slice of grapefruit into pieces and add to the vegetables. Send the form with vegetables to the oven, preheated to 180 degrees, covering the top of the form with foil. Bake accordion potatoes with tomatoes and cabbage until vegetables are fully cooked, 40-50 minutes.
