Air cake with chocolate cream

Recipe for a hearty chocolate cake. Cream for the cake is prepared on the basis of chocolate and butter.

  1. Preheat the oven to 175 degrees. Line 2 15 cm cake tins with parchment paper, grease with butter and sprinkle with flour.
  2. Melt butter and cool.
  3. Beat egg white at low speed, about 1 minute. Increase speed, beat until soft peaks form, 1 minute more. Gradually, without stopping beating, add 2 tbsp. tablespoons of sugar and beat until smooth and dense peaks.
  4. Mix flour, starch, baking powder, soda, salt and the remaining 6 tbsp. spoons of sugar.
  5. Separately mix the whey, melted butter, vegetable oil, vanilla and egg yolks.
  6. Gradually add the flour mixture, mixing the dough with a mixer at low speed.
  7. Put a third of the proteins in the dough, mix gently. Then add the rest of the whites and mix gently again.
  8. Divide the dough between the two forms, smooth the top. Bake for 15-20 minutes.
  9. Cool the chocolate cake layers on a wire rack for 10 minutes. Remove from molds and refrigerate for 1 hour.
  10. Prepare chocolate cream. To do this, break the chocolate into small pieces. Melt in the microwave at 50% power for 2-4 minutes. Cool down.
  11. Mix butter, powdered sugar, cocoa and salt. Add honey and vanilla. Mix. Add liquid chocolate, stir until smooth.
  12. Cover the edges of the cake dish with parchment paper. Put one cake on a dish. Put 0.5 cups of chocolate mass, spread over the surface of the cake.
  13. Put the second cake on top, press lightly. Put another 0.5 cups of chocolate mass, spread.
  14. Distribute the remaining mass, spreading it on the sides of the cakes. You can level the mass to smoothness, or you can form bumps.
  15. Carefully remove parchment paper. Chocolate cake is ready.
  16. Enjoy your meal!
