  1. Preheat milk to room temperature. Transfer to a large bowl, add warm water, salt and dry yeast. Add sifted flour and mix. Add olive oil.
  2. Knead the dough thoroughly, cover with foil and put in a warm place for 40 minutes. If the dough is not elastic enough, add a little more olive oil.
  3. Wash the apples, dry and cut into thin circles. Remove the core very carefully.
  4. Knead the dough and transfer to a floured work surface. Knead again and use a rolling pin to roll out into a cake, the diameter of which should be much larger than the diameter of the baking dish. Quickly transfer the cake to the mold. When, after a few seconds, the dough begins to shrink, fix its edges to the size of the mold, simply pressing them tightly with your hands. To prevent the dough from rising and pushing out the filling during baking, make several punctures on its surface with a knife or fork.
  5. Place the apple circles on the dough in a circle, leaving about 1–1.5 cm free at the edges. Let stand for 10 minutes.
  6. Sprinkle the pizza with lemon zest and brush with slightly warmed apricot jam syrup. Place some jam apricots on top of the apples. Bake at 200 ° C for 10 minutes.
