Apples with Dried Fruits

A versatile side dish that will suit not only any poultry, but also meat. Also useful.

  1. Scald all dried fruits with a full kettle of boiling water, drain the water. Fold the dried fruits into a container with a lid, pour over with wine, cover and leave at room temperature for 12-24 hours. Stir from time to time.
  2. Cut the apples lengthwise into 6-8 pieces each, remove the core, pour the lemon juice over the apples.
  3. Peel the ginger and cut into thinner strips. In a large skillet, combine the ginger, zest and ghee, put on low heat, and heat for 5 minutes.
  4. Increase heat to maximum, put apples in butter, fry until golden brown on all sides, about 7 minutes. Sprinkle with curry and salt, heat for 20-30 sec.
  5. Add dried fruit along with liquid, bring to a boil, cook for 3-4 minutes. Sprinkle with mint and serve hot.
