Heat vegetable oil in a deep saucepan over medium heat and sauté finely chopped onions for 4-5 minutes until golden brown.
Add chopped garlic and rice, stir well and fry, stirring occasionally, for 2-3 minutes.
Add ginger and salt, add water, coconut milk and broth, stir. Then add the beans, thyme, and whole peppers. Bring to a boil, reduce heat, cover and cook 15-20 minutes until rice is done.
Remove from heat and leave unopened for 10 minutes. Toss with a fork, remove the pepper and drizzle lightly with lime juice (optional).
