Cook the rice until the water is completely absorbed, remove from heat and set aside for a while.
Cut the carrots into small cubes, as well as the peppers. Heat 0.5 tablespoons of olive oil in a frying pan and add carrots, peppers, chili, drizzle with soy sauce and cook for 4 minutes.
Crush the garlic, chop the ginger. Add to the pan and fry for a few minutes.
Chop 5 cabbage leaves, add to the pan and drizzle lightly with oil. Stir and cook for about 10 minutes.
Chop the mushrooms and add to the pan. Cook for a couple of minutes.
Chop the onion and add to the skillet. Cook for a couple more minutes and add rice, then some soy sauce. Simmer until the rice has absorbed all the juices, add herbs to taste.
