Arugula is a new national Russian product. At least Moscow. The menu of any metropolitan restaurant cannot do without these spicy-tasting leaves. Most often, arugula is served in the company of shrimps - this is, of course, very tasty, but not the only solution! With goat cheese, oranges and vanilla dressing, arugula makes the perfect lunch - both winter and summer.

  1. Prepare butter in advance. Pour it into a saucepan. Cut the vanilla pod in half lengthwise, use the end of a sharp knife to scrape the seeds into a saucepan. Put the pod there. Heat the oil over low heat until you smell vanilla (do not boil!) And remove the saucepan from heat. Cool, leave for 1-2 hours.
  2. Lightly fry the sesame seeds in a heated dry frying pan, shaking them over low heat for 1 minute. Chop the nuts into small crumbs with a knife, but not into flour. Mix with sesame seeds.
  3. Cut the cheese "log" across into 8 pieces using dental floss or a thin sharp knife soaked in hot water. Very gently roll each piece in the nut mixture on all sides.
  4. Cut the peel off the orange with a sharp knife so that the flesh is visible. Then cut the fillets into wedges.
  5. Mix the salad mix leaves with vanilla oil to taste, arrange in 4 or 8 plates.
  6. Top with 1 or 2 pieces of cheese in nuts and spread out the orange fillets. Season with salt and pepper, serve immediately with fresh bread.
