A simple and unusual cupcake with bananas, coconut, cinnamon and nuts. A great option when you don't have much time to bake.

  1. In a bowl, mix 180 g of flour, 0.25 tsp. salt, 0.5 tsp cinnamon, 10 g baking powder and 0.5 tsp. soda.
  2. On the stove in a ladle, melt 60 g of butter over low heat.
  3. 4 medium ripe but firm bananas cut into slices.
  4. And we make mashed potatoes out of them in a convenient way: using a fork, a potato masher or a blender. We make mashed potatoes without fanaticism - let pieces of banana remain.
  5. Add 100 g brown or regular sugar. We mix. Add melted butter and mix again.
  6. Add one egg and mix again. You can add a pinch of vanilla.
  7. Add the dry mixture to the wet mixture and mix thoroughly again.
  8. We chop half a glass of any nuts (I have walnuts) in a blender not very finely. Add them to the dough.
  9. Add 0.25 cups of coconut flakes. We mix everything well.
  10. We heat the oven to 180 degrees.
  11. Lubricate the form (I have a diameter of 21 cm) with butter and sprinkle with flour or semolina.
  12. Pour the dough into a mold, put in the oven and bake a banana muffin with nuts for 40-50 minutes until a dry skewer.
  13. If the top of the cake is burning, cover with foil. If the top does not burn, but just turns very brown, do not cover - the crust is very tasty.
  14. After baking, let the cake cool for 10 minutes and remove it from the mold. The top of the cake can be decorated with any icing or powdered sugar.
