In this recipe, I'll show you how to make an airy and delicate Italian dessert with a stunning contrast between sweet buttercream and bitter coffee. Of course it's tiramisu. In Italy, it was believed that tiramisu had an invigorating, exciting effect, so Italian nobles regularly used it before love dates.

  1. We start preparing tiramisu with cream.
  2. First of all, thoroughly rinse the eggs under running water. I recommend doing this with soap. Carefully separate the whites from the yolks. Pay attention to the fact that not a single drop of yolk should get into the whites, otherwise the whites will not whip.
  3. Beat the whites for several minutes until characteristic stable peaks appear. To make it easier to beat the whites, I recommend adding a pinch of salt or a little lemon juice to them.
  4. Back to yolks. Add sugar to them. Then, using a mixer, beat the yolks with sugar to such an extent until the mixture acquires a delicate creamy shade.
  5. Add the mascarpone cheese to the yolks.
  6. If you could not find mascarpone cheese, and you have a question, what can be replaced with it, then I will immediately say that nothing. If you still decide to replace mascarpone with another Philadelphia-type curd cheese, then you will not get tiramisu, but a completely different dessert with curd cream.
  7. We begin to gently mix the cheese into a mixture of yolks and sugar. When the cheese is a little dispersed, you can continue mixing with a blender. It is better to start at the minimum speed and gradually increase it to medium.
  8. In the resulting mixture, add the proteins that we whipped earlier. Now you need to mix the contents of the bowl very carefully, making slow movements with a spoon from the bottom up, so that as much air as possible is preserved in the whipped protein mass. It is important to note that you cannot use a mixer for this procedure! After a few minutes, we should have a very light and airy cream.
  9. In the course of further preparation, we will need espresso coffee. You can brew it yourself, but I did not complicate my life and bought a ready-made espresso in a coffee shop near the house, besides, by the time it was ready to start cooking, it had just cooled down. Pour the espresso into any wide dish with a flat bottom. Add cognac.
  10. We take the savoiardi biscuits and, holding them with two fingers, lower them into the cooled coffee with cognac. It is important to remember that you should not lower the cookies for more than 3 seconds, otherwise they will get soggy and lose their shape.
  11. Let's proceed directly to the assembly of tiramisu. Usually for this dessert they use small portion forms, however, in honor of Valentine's Day, I want to make tiramisu in the shape of a heart, so I will use the appropriate baking dish.
  12. We spread the cookies soaked in coffee in the form. Cover cookies with cream on top. Then lay out the remaining cookies in the second layer. Fill the cookies with the rest of the cream.
  13. We remove the form with the dessert "Tiramisu" in the refrigerator for 8 hours.
  14. Dessert "Tiramisu" is completely ready. To decorate tiramisu, cocoa powder or grated chocolate is usually used. Sprinkle the tiramisu with cocoa through a strainer.
