Baked cauliflower with rice

Cauliflower is best baked with something like butter, spices, or a sauce. This baked cauliflower recipe has it all - olive oil, spices and fish sauce, and even rice powder.

  1. Preheat oven to 210 C. Place cauliflower and butter on a baking sheet lined with baking paper. Fry, stirring occasionally for 35-45 minutes. Let cool slightly.
  2. Cut into small pieces. Transfer to a large bowl, add chili, lemongrass, kaffir lime leaves, fish sauce and lime juice. Mix well.
  3. Place the rice in a medium skillet, fry over medium heat, stirring constantly for 10-15 minutes. Then grind in a mill.
  4. Onions, pea shoots, cilantro, mint and 2 tsp. add toasted rice powder to cauliflower, season with salt to taste.
