Baked potatoes with broccoli, scrambled eggs and cheese are a delicious, aromatic and mouth-watering dish that can be prepared for all family members. The cooking process is not quick, but if the base is prepared in advance, then in the morning you will spend 30 minutes for breakfast.

  1. Preheat the oven to 220 degrees.
  2. Peel, wash and dry the potatoes. Cut the potatoes into small cubes.
  3. Rinse broccoli and cut into small pieces.
  4. Peel the onion, wash and cut into small cubes.
  5. Stir all the ingredients together, season them with salt and ground pepper, add oil. Place the vegetables in a baking dish.
  6. Bake vegetables for 10 minutes, then stir and bake for another 10 minutes. Cool vegetables, seal and refrigerate for 8-24 hours.
  7. In the morning, take out the form with vegetables, let stand a little at room temperature - 20-30 minutes.
  8. 15 minutes before the dish is ready for roasting, turn on the oven and preheat to 180 degrees.
  9. Make holes in the vegetables and beat in the eggs.
  10. Grate the cheese on a coarse grater.
  11. Sprinkle vegetables with eggs with cheese and place in the oven. Bake for 12-15 minutes.
  12. Remove the finished dish from the oven and serve.
  13. Serve this breakfast with toast, slices of ham and a cup of coffee.
