Baked Potatoes with Vegetables

These are very delicious potatoes! It's all about the dressing: spices, garlic, lemon juice and olive oil. During baking and after, there will be mind-blowing smells in the kitchen.   1. Wash the potatoes, cut into large pieces and boil in salted water until they are tender. Drain the water.
  2. Cut eggplants and zucchini into rings, pepper into strips. Fry vegetables in a frying pan in olive oil (1 tablespoon) for 5 minutes.
  3. In a deep bowl, combine the dressing spices: finely chopped garlic, cumin, coriander, curry with lemon juice and olive oil. Stir in the eggplant and zucchini dressing.
  4. Grease a baking dish with oil, put potatoes, vegetables with dressing on top. Mix and level everything. Cover with foil on top and send to the oven at 180 degrees for 30 minutes.
  5. After 30 minutes, remove the foil and bake for another 20 minutes. And you can enjoy!
