Spicy banana muffin with carrots and raisins - delicious and healthy homemade cakes for tea! Thanks to the grated carrots, banana cake has a bright color inherent in all carrot cakes, and just a magical aroma!

  1. Prepare all the necessary ingredients. Turn on the oven to preheat to 180 degrees.
  2. Peel the banana. Mash the banana pulp with a fork.
  3. Peel the carrots and grate on a fine grater directly into a bowl with banana puree.
  4. Mix banana puree and grated carrots.
  5. In another bowl, combine egg and sugar.
  6. With a whisk or with a mixer, intensively mix the egg with sugar. Pour in sunflower oil.
  7. Mix the egg and butter mixture well again.
  8. Add the egg mixture to the carrot-banana mixture, mix.
  9. Combine flour, salt, soda, baking powder, cinnamon, nutmeg and ginger.
  10. Sift the mixture of dry ingredients into a container with a liquid dough base.
  11. Stir.
  12. Rinse the raisins, dry them, roll a little in flour and add to the dough.
  13. Mix the dough with raisins.
  14. For baking a cupcake, it is better to use a round silicone mold with a hole in the middle. If there is no silicone mold, take a metal one, but in this case, be sure to grease the bottom and sides of the mold with oil. If you like, you can take a muffin pan and bake small cupcakes.
  15. Put the dough into the prepared form.
  16. Bake the Carrot and Raisin Banana Cake in an oven preheated to 180 degrees for about 40 minutes.
  17. Transfer the finished banana-carrot cake to a wire rack or plate and cool before serving.
  18. If you pour a fragrant carrot-banana cake with cinnamon and ginger frosting and decorate with confectionery sprinkles, you will get a festive pastry!
