Banana muffin with blackcurrant

Cooking a delicious cupcake with bananas and blackcurrants. Cake dough, as you might have guessed, is based on bananas. The cake turns out moderately sweet, slightly spicy and fragrant. Berries give a pleasant sourness.

  1. We break the bananas into pieces, chop them with a masher or fork.
  2. Add sugar, eggs, kefir, spices, a pinch of salt, sunflower oil to the banana puree. Mix well with a whisk.
  3. Add flour in small portions, sifting into a bowl (leave 1 tablespoon). Together with flour, add baking powder and soda.
  4. Stir the dough after each serving of flour so that there are no lumps.
  5. Banana Cake Dough is Ready!
  6. Lubricate the baking dish with butter. The diameter of my form is 24 cm. If the form is silicone, then it is not necessary to lubricate it.
  7. Pour about half of the batter into the pan and spread evenly with a spatula.
  8. To the berries add 1 tbsp. tablespoon of flour and mix well. I pre-washed the frozen currants in a colander under running water, and the berry has already thawed.
  9. Spread half of the berries evenly over the dough.
  10. Spread the remaining dough on top.
  11. And then all the berries again. So that the berries are immersed in the dough, smooth them with a spoon.
  12. We bake a banana cake with currant berries in an oven preheated to 180 degrees for about 60-70 minutes. We check the readiness of the cake with a wooden stick, it should be clean.
  13. Let the cake cool down and decorate with powdered sugar.
  14. Banana cake with currants is ready! Banana cakes are always delicious! You can make tea and enjoy!
