Bean salad with zucchini

This bean salad is easy to make. Zucchini is blanched in salted water, mixed with beans and seasoned with lemon juice and spices. Delicious, healthy and healthy.

  1. Cut the zucchini in half lengthwise and then cut into slices. Blanch the zucchini in salted water for 2-3 minutes, until soft but not overcooked. Drain the blanched zucchini in a colander, rinse the slices under running cold water, let the water drain.
  2. Transfer the zucchini slices to a bowl, put the beans in the same place, pour over with oil, lemon juice, sprinkle with zest, salt and pepper. Toss the salad, cover and place the bean salad in the refrigerator to chill, about 30 minutes.
  3. Serve bean salad in serving bowls.
