Original breakfast - beetroot omelet. The addition of beets makes the omelet bright and gives it a special rich taste. Such a juicy omelet can be supplemented with various fillings, for example, a cottage cheese filling with herbs and cucumber. It turns out both delicious and beautiful!

  1. We prepare the necessary products.
  2. Beets can be boiled in advance or you can use boiled beets left over from other dishes.
  3. Put the beets in a saucepan, fill with water, set on maximum heat and bring to a boil. Then reduce heat to low and cook the beets for about 40 minutes, until soft. Remove the finished beets from the water and leave to cool.
  4. Peel and rub the cooled beets on the finest grater.
  5. Break the eggs into a bowl, add salt.
  6. Stir with a whisk or mixer at low speed.
  7. Add the grated beets.
  8. Stir until smooth. Add lemon juice.
  9. Mix again.
  10. Heat the vegetable oil in a frying pan and pour in the egg mixture.
  11. Reduce the heat, cover the pan with a lid and cook the omelet over low heat for about 5 minutes, until the eggs are completely set.
  12. Unusual beetroot omelet is ready. We transfer it to a plate.
  13. Cooking the filling. Wash the cucumber, dry and cut into thin slices. We wash the dill, dry it and chop it finely with a knife.
  14. Combine cottage cheese and chopped dill in a deep bowl.
  15. Add salt and mix.
  16. We spread the curd filling on half of the omelet.
  17. Put cucumber circles on top.
  18. Fold the omelet in half.
  19. Bright beetroot omelet with curd filling is ready. Bon Appetit!
