Berry juice with honey and ginger

  1. 1. If the berries (I have viburnum) are frozen, defrost. Squeeze the juice from the orange and remove a couple of ribbons of zest. Mash with a crush in a convenient container. Rub through a sieve. Pour the cake that remained in the sieve with water and boil for 10 minutes with sugar, ginger cut into thin slices and a couple of ribbons of orange peel. Do not add a lot of zest, just to add flavor.
  2. 2. Then get the zest, and pour in the orange and berry juices. Bring to a boil, but do not boil. Leave in a saucepan under a tight lid for 15 minutes, and brew.
  3. 3. Add honey, stir until dissolved, strain and serve with orange slices (optional).
