A cake made of biscuit cakes in butter with a layer of applesauce and butter cream fully justifies its name - it is really tender, tender! And the cake is very tasty, although it is not difficult to prepare. Such an original cake will become a real decoration of the festive table and will please the most fastidious sweet tooth in terms of taste!

  1. Gather all the ingredients you need to make the Buttercream Applesauce Sponge Cake.
  2. Turn on the oven to preheat to 180 degrees.
  3. In a bowl or bowl of a kitchen machine, combine the sugar and soft butter.
  4. Whisk the butter and sugar into a fluffy cream.
  5. Continue beating while adding eggs one at a time.
  6. In another bowl, combine flour, baking powder and cornstarch.
  7. Mix dry ingredients.
  8. Sift the dry ingredient mixture into the bowl with the butter-egg mixture.
  9. Mix the dough with a mixer or the appropriate attachment of a kitchen machine.
  10. Prepare two molds by first laying a circle of baking parchment of the appropriate diameter on the bottom of each of the molds. The diameter of my molds is 17 cm. Pour the dough into the molds using a kitchen scale (each mold will yield approximately 300 g of dough).
  11. Bake the butter biscuits in an oven preheated to 180 degrees for about 20 minutes. Check readiness with a toothpick - when piercing the biscuit in the center, the toothpick should come out dry.
  12. Free the finished biscuits from the molds and transfer to the wire rack. Let the biscuits cool completely.
  13. Cut each of the cooled biscuits into 2 cakes. There will be 4 cakes in total.
  14. For the buttercream, pour the cold heavy cream into a mixing bowl.
  15. Whip the cream for about a minute, then add the powdered sugar and beat the cream on high speed until stiff peaks form.
  16. Transfer the finished buttercream to a piping bag fitted with a round tip.
  17. For a layer of cake, we need applesauce. You can make your own puree from baked apples in the oven or microwave. You can also buy ready-made purees, such as baby food. I used applesauce with condensed milk, prepared since the summer (see the recipe at the link in the list of ingredients). In total, you need 240 g of applesauce. Since my puree is sweet, I whipped the cream with a small amount of powdered sugar (with unsweetened puree, the amount of powdered sugar will need to be slightly increased).
  18. Let's start assembling the cake. Put one cake on a plate.
  19. Brush it all over with applesauce.
  20. Pour some of the buttercream onto the applesauce-covered cake, also covering the entire surface of the cake.
  21. Then lay out the next cake, applesauce, cream, cake and so on. Do not grease the top cake with mashed potatoes.
  22. Smooth the sides and top of the cake with the remaining buttercream. Now the cake needs to be put in the refrigerator for several hours.
  23. To decorate the cake, I used small cookies, meringue and confectionery sprinkles. You can decorate the cake as you wish.
  24. Decorate the cake before serving.
  25. Biscuit cake "Gentle" is ready.
