Biscuit roll with apricots

Incredibly tender and juicy delicacy - biscuit roll with apricots. Biscuit soaked in sour cream turns out to be delicate and airy in taste, with a pronounced fruity note.

Ingredients

Directions

  1. Wash the chicken eggs and break into the bowl of a food processor or into some other deep container. Pour in the same salt and sugar (1 cup). Beat for 3 minutes in a lush foam at the maximum speed of the technique. (If a food processor is not available, use a mixer.)
  2. Add the sifted wheat flour and beat again for 1 minute at minimum speed so that the egg foam does not fall off. You can add some ground cinnamon or vanilla if you like.
  3. Turn on the oven to 180 degrees. Grease the parchment with vegetable oil and place it in a baking dish. Pour in the biscuit dough.
  4. Bake the biscuit for about 15-20 minutes without baking it until brown, otherwise it will break when twisting. Remove the baked biscuit from the mold by lifting it by the edges of the parchment paper.
  5. Put the biscuit on the parchment on the table and immediately roll it up. Use a towel or oven mitt. Fix the roll in this form and leave for 30 minutes to cool.
  6. Once the biscuit roll has cooled, mix the sour cream, sugar (40 g) and cream thickener in a separate bowl. Be sure to add a thickener, otherwise the sugar will dissolve in sour cream and your cream will flow, become liquid.
  7. Peel the washed apricots and cut into medium cubes.
  8. Carefully unroll the roll, removing the parchment. Lubricate the roll with sour cream and put apricots on it. Roll the biscuit roll with cream and fruit again, working with a little pressure. Do not worry if your roll breaks - sour cream will hold its parts together, the main thing is to lightly press the parts of the roll together.
  9. Cut the biscuit roll with apricots first in half, and then each of the halves into several portioned pieces. Serve a treat to the table along with freshly brewed tea.
