A recipe for a very fragrant, beautiful and incredibly tasty orange juice biscuit - for lovers of fruit cakes.

  1. First, sift the flour, starch and baking powder into a bowl. Mix thoroughly so that all the components are evenly distributed among themselves.
  2. Separately, mix orange juice and orange zest.
  3. (If there is no zest, then you can do without it.) Absolutely any juice can be used, but the main thing is that the fruit juice is not too acidic and without pulp.
  4. Turn on the oven so that it warms up well.
  5. We combine the eggs with a pinch of salt and begin to beat with a mixer - first at low speeds, then gradually increase them. We achieve a foamy mass and gradually introduce sugar. Beat for a long time until the mass becomes creamy and smooth - the trace left from the whisk should not blur.
  6. When the eggs are well beaten, add the juice and beat again for 1-2 minutes.
  7. Now add the flour mixture to the egg mass: sift in two or three doses and gently mix it with a spatula, whisk or spoon.
  8. We cover the bottom of the form (I have a form with a diameter of 24 cm) with baking paper, do not grease the sides with anything. Pour the biscuit dough into the mold and scroll a little so that the middle of the biscuit is even.
  9. We put in an oven preheated to 180 degrees and bake a fruit biscuit for about 40 minutes (do not open the oven door for the first 30 minutes!). Baking time depends on the characteristics of your oven, be guided by a dry wooden stick before testing.
  10. The orange juice biscuit is beautiful, tall and very fragrant. Leave it in the form until it cools completely. Then we pass with a knife between the biscuit and the sides of the mold, remove it and let it rest for at least 4 hours.
  11. The biscuit turns out to be tall and can be cut into three parts, I do this with the help of dental floss.
