Blackcurrant mousse cake (no bake)

Very easy to make blackcurrant mousse cake. Such a berry cake is prepared without baking, it turns out very refreshing and bright.

  1. Break the cookies in portions with a blender into small crumbs.
  2. Place cookie crumbs in a bowl and add melted butter. Mix well.
  3. Line a 24-26 cm tin with parchment paper and press down the bottom of the tin with a mixture of biscuits and butter. Put the form in the refrigerator for a while, while the berry layer is preparing.
  4. Transfer blackcurrants to a saucepan, cover with sugar.
  5. Blend with an immersion blender.
  6. Put the saucepan on fire. Bring the mixture to a boil and immediately remove from heat. Cool to room temperature.
  7. Add sour cream to the berry mass, mix.
  8. Pour instant gelatin with water, leave for 5 minutes to swell, then heat until completely dissolved. Pour the gelatin into the sour cream mixture, mix.
  9. Take the form out of the refrigerator. Pour the berry mass onto a layer of cookies and refrigerate for 4-6 hours, until completely solidified.
  10. Separate the finished mousse cake from the mold and put it on a beautiful plate, decorate at your discretion, for example, with currant berries and mint leaves.
  11. Enjoy your meal!
