Blueberry wine with mint

Ingredients

  1. Boil the syrup from sugar and 3 liters of water. Pour mint leaves and lemon zest with some of the hot syrup in a saucepan, cover and let cool. Cool the rest of the syrup. Sort the blueberries, wash and grind in a blender until puree. Transfer the puree to a bottle, add the mint and all the syrup. Stir and leave to ferment at room temperature for 7 days, remembering to stir regularly. Then pour out all the settled liquid from the bottle - carefully so as not to shake the berry mass - into another bottle, closed with a cork with a tube coming out of it. Dip the end of this tube into a jar of water and leave it that way for another 7-10 days for further fermentation. Then pour into bottles and let it brew for 3-4 months.
