  1. Dry the bread in a toaster and grind, and mix with parmesan and parsley. Beat the egg well with a fork.
  2. Add salt and pepper to the salmon pieces. Roll each of them in flour, dip in beaten egg, and then roll in a mixture of crackers.
  3. In a frying pan, heat a little butter and 1 tbsp. olive oil. Fry the salmon pieces for 5 minutes on each side over low heat. Serve immediately.
