Broccoli puree soup with cashews and croutons

A nutty green soup, incredibly tasty and healthy.

Ingredients

Directions

  1. Place broccoli, garlic and onion in a saucepan, pour over vegetable broth.
  2. Bring the broth to a boil, cover, reduce heat.
  3. Simmer the soup over low heat until tender for eight minutes.
  4. Transfer half of the broth and broccoli to a blender along with half of the potatoes and cashews.
  5. Beat everything until smooth.
  6. Pour into another container, repeat the same with the rest of the potatoes, broccoli and cashews.
  7. Cover the soup and heat over low heat for 10 minutes.
  8. Season with salt and pepper, add red pepper to taste.
  9. Cut the bread into cubes, cut the crusts.
  10. Fry the croutons in a dry frying pan and dry in the oven.
  11. Serve the finished soup with croutons.
