  1. Peel and coarsely chop the Brussels sprouts, celery and shallots.
  2. Heat the butter in a saucepan. Put the celery and onion there, fry the vegetables until soft for 3 minutes.
  3. Add cabbage, salt and cook for 2 more minutes. Pour in broth and bring to a boil.
  4. Reduce heat and cook the soup for 10 minutes, covered, until the cabbage is tender.
  5. Use a blender to puree the soup.
  6. Season soup with heavy cream and seeds if desired
