No joyful event in the family is complete without a birthday cake. Sponge cake "Clown" with butter-custard is a wonderful dessert for a children's holiday. Cake "Clown" according to this recipe will please both adults and children.

  1. Separate the whites from the yolks. Beat the whites in a strong foam, gradually adding 3 tablespoons of sugar.
  2. In a separate bowl, grind the yolks with the remaining sugar until white.
  3. Add half of the whipped whites to the yolks, mix lightly. Add the sifted flour, mix lightly. Add the remaining proteins and mix gently in one direction until a homogeneous dough is obtained.
  4. Cover the bottom of a springform pan with a diameter of 26 centimeters with baking paper and grease the mold with butter. Carefully spread the biscuit dough into the mold. Bake in a preheated oven at 200 degrees Celsius for 35-40 minutes.
  5. We prepare products for chocolate biscuit.
  6. Mix flour with cocoa until a homogeneous mixture is obtained and sift. Next, prepare the dough in the same way as for a light biscuit. Beat whites and yolks separately with sugar, add flour with cocoa, mix.
  7. Put the dough into a mold. Bake in a preheated oven at 200 degrees Celsius for 35-40 minutes.
  8. We spread the baked cakes on wooden boards, remove the paper and let them rest for at least 4 hours.
  9. Cook the custard ahead of time (see the link in the ingredients list for the recipe) and let it cool to room temperature. Beat soft butter in a mixer until white.
  10. While continuing to beat, gradually add the chilled custard to it. The cream should be white and fluffy.
  11. We cut each cake into three parts in height. In two bowls, remove a little light and a little dark crumbs.
  12. We put a light cake in one detachable form, and chocolate in the other. We alternate the cakes, generously smearing them with cream. You should get two cakes - vanilla and chocolate.
  13. We spread the cakes on wooden boards, generously coat the top and sides with cream.
  14. Put 2 tablespoons of cream in a separate bowl, add 1 teaspoon of cocoa, mix thoroughly and put in a cornet with a thin hole.
  15. On one of the cakes we draw the “face” of a clown with chocolate cream. "Eyebrows" are directed with a dark crumb. "Cheeks" blush with raspberries, rubbed through a sieve, with the addition of sugar. We make a “hairstyle” with a light crumb.
  16. From the second cake we cut out a triangle - this is the "cap", and two sectors - the "collar". From the remains of the second cake, you can close up the "ears".
  17. We decorate the cake "Clown" with berries and crumbs.
  18. Let stand for several hours and serve to the birthday, festive table.
