  3. Orange zest can be taken ready-made, or you can make it fresh: you need to remove the bright outer layer of the peel from a washed, unpeeled orange with a fine grater. I use frozen zest - I take it out of the freezer in advance.
  4. Wash persimmon.
  5. Choose raisins without pits. If the raisins are very dry, pre-fill them with boiling water for 10-15 minutes. Then the remaining water must be removed - you can throw the raisins into a strainer or blot with a towel.
  6. Sift the flour into a deep bowl.
  7. Add salt, soda, ground cinnamon. Stir.
  8. Cut persimmon in half. If there are bones, remove them. Scoop out the pulp with a spoon.
  9. Punch the pulp of the persimmon with an immersion blender until the consistency of a homogeneous slurry.
  10. Add kefir, orange zest to chopped persimmon. Stir.
  11. Turn on the oven to preheat to 160 degrees.
  12. Heat the butter in the microwave until completely melted.
  13. Pour in the sugar. Stir with a whisk or mixer.
  14. Add eggs one at a time. After each addition, mix thoroughly with a whisk.
  15. Pour the egg-butter mixture into the persimmon. Stir.
  16. Pour in the flour mixture. Mix until a homogeneous consistency without lumps. The dough becomes thick.
  17. Add raisins. Stir.
  18. For baking, I use a standard silicone cake pan. Grease the mold with oil.
