Tiramisu is a very popular dessert, it is on the menu of all Italian restaurants and is always in demand. But such a dessert is prepared very simply, because it consists of several ingredients: mascarpone cheese, coffee, eggs, sugar and savoiardi cookies. For those who avoid raw eggs, I suggest making a cream with whipped cream.

  1. Prepare all ingredients.
  2. Savoiardi can be purchased at major supermarkets or baked on your own.
  3. Instead of mascarpone, other cream cheese is also suitable.
  4. Rum can be replaced with cognac, whiskey or marsala wine.
  5. Gelatin pour 30 ml of drinking water and leave to swell for 10 minutes.
  6. Transfer the mascarpone cheese to a deep and wide bowl. Add half of the powdered sugar (50 g). Blend with a blender fitted with a whisk attachment until smooth.
  7. Add alcohol to cheese. Stir with a whisk.
  8. Pour heavy cream into a bowl for whipping. Add the rest of the powdered sugar. Beat 5-7 minutes.
  9. The cream should double in size and thicken. If you can’t beat to stable peaks, it doesn’t matter - the cream will still be the right consistency due to the thick cream cheese.
  10. By this time, the gelatin has swollen, absorbed all the water.
  11. Melt gelatin in a water bath or microwave for 5-10 seconds, until liquid. Don't bring it to a boil!
  12. Cut off the rounded edges on one side of half of the savoiardi cookies. These cookies should be stable, they will act as the sides of the cake.
  13. Place a detachable round form with a diameter of 17 cm and a height of 10 cm on a flat plate, plank or substrate. Place the savoiardi in the pan with the cut edge down so that the sugar side is on the outside of the cake.
  14. Place the bottom of the savoyardi mold with the sugar side up so as to fill all the voids. Scraps and broken cookies are great for this layer.
  15. Using a pastry brush, saturate the bottom layer of cookies with strong coffee.
  16. Pour the melted gelatin into the mascarpone bowl. With a whisk at low speed, stir the gelatin into the cream.
  17. Add whipped cream and stir again with a whisk.
  18. The cream turns out to be quite thick, it keeps its shape and falls from the shoulder blade in a large drop.
  19. Transfer the cream to a pastry bag - it is more convenient to work with a deep form.
  20. Spread a layer of cream on top of the cookies.
  21. Pour the coffee into a deep bowl.
  22. Dip the cookies in the coffee for 1-2 seconds and place sugar-side up in a single layer on the baking sheet.
  23. Spread some more cream on top.
  24. In this way, repeat the layers of cookies and cream two more times.
  25. Smooth the top layer of cream with a spatula.
  26. Decorate the surface of the cake with cream, squeezing small tubercles close to each other - a classic dessert decoration. Put the cake in the refrigerator for 3-4 hours.
  27. The cake has stabilized. Gently dust the surface of the cake with cocoa powder. Remove the form.
  28. Thanks to the addition of gelatin, the sides of the cake hold well after removing the mold and when cutting.
