Today I want to share a recipe for a delicious carrot cake in the form of a panda. Do not be afraid of such an ingredient in the composition as carrots, you will definitely not determine the taste of it in the finished cake.

  1. We heat the oven to 160 degrees.
  2. We rub the carrots on a fine grater and squeeze a little from excess moisture.
  3. Combine vegetable oil and sugar. Whisk for a few minutes.
  4. Whisking constantly, add the eggs (one at a time). Mix well after each addition.
  5. Separately combine the sifted flour, baking powder, soda, salt and spices. Mix dry ingredients well together.
  6. Combine dry and liquid ingredients together. Mix well.
  7. Remove the zest from the orange with a fine grater. Coarsely chop the nuts with a knife.
  8. Add orange zest, nuts and carrots to the dough. Mix well until smooth.
  9. Divide the dough in half. We spread half of the dough in a mold with a diameter of 18-19 cm. We bake the cake at 160 degrees for 30-40 minutes. The baking time depends on the characteristics of the oven, check the readiness with a wooden skewer - when piercing the cake in the center, the skewer should remain dry.
  10. In the same way we bake the second cake.
  11. If you have time, wrap the cakes in cling film and refrigerate overnight - this will make the cakes easier to cut.
  12. For the cream, combine well-chilled cream, cold cream cheese and powdered sugar. Beat the cream for a few minutes until thick. It is important not to over-whip the cream, otherwise it may exfoliate.
  13. We cut each cake lengthwise into two parts about 1-1.5 cm high.
  14. My cakes turned out to be even, but on one I cut off the top very thinly. Trimmings are useful for decoration.
  15. We collect the cake, smearing each cake with cream.
  16. In addition to cream, you can use orange curd or caramel as a filling.
  17. We also grease the sides of the cake with cream. Carrot cake with cheese cream is ready.
  18. We decorate the cake in the form of a panda. From scraps cut out the nose for the "panda". We spread the workpiece in the lower central part of the cake and grease with cream. To make the “nose” more voluminous, put another piece of the cake on top of a smaller size and also lubricate with cream.
  19. Part of the cream (3-4 tablespoons) is painted with black dye and draw a "panda" nose and eyes. Using a pastry bag with a small "closed star" nozzle, decorate the eyes and nose with black cream, and everything else with white. From the mastic we cut out 2 circles with a diameter of 7 cm, stick two toothpicks into each - these will be panda ears. We leave the blanks from the mastic overnight on the table so that the mastic dries. During this time, the cake will have time to soak.
  20. We attach the "ears" at the top of the cake, on the sides. And the panda cake is ready!
