A delicious cake of bright carrots, nuts, raisins and cookies will become one of your favorite treats. It is prepared without baking, which means that you will get a wonderful dessert, significantly saving time.

Ingredients

  1. Wash the raisins in warm water. Pour hot water over it and leave for 5 minutes. Drain the water, dry the raisins.
  2. Peel the carrots, wash and grate on a fine grater. Heat the pan, put the grated carrots and add 30 g of butter.
  3. Pour sugar into the pan with carrots and butter. If the carrots are not juicy, add two tablespoons of cold water. Put the pan on a slow fire and fry the carrots, stirring, for 20-25 minutes. Carrots should become soft.
  4. Remove the skillet from the heat. Pour condensed milk into carrots, mix.
  5. Add lemon zest and spices (ginger, nutmeg and cinnamon) to the carrot mass. Stir.
  6. Add dried raisins.
  7. Add the remaining butter.
  8. Mix everything well.
  9. Coarsely chop half of the walnuts.
  10. Grind half of the cookies into large crumbs.
  11. Break the remaining cookies and place in a blender. Add the remaining walnuts to the cookies.
  12. Grind cookies and nuts into small crumbs.
  13. Add cookie crumbs and walnuts to the skillet with the carrot mixture. Mix everything thoroughly.
  14. Pour chopped nuts into the pan, mix everything.
  15. Send the remaining cookies to the pan with the carrot mass.
  16. Add vanilla sugar and mix well.
  17. Moisten the form (mine is 12x18 cm in size), cover it with cling film and transfer the carrot mass into it, compact it well. Cover the top with cling film and refrigerate for 2-3 hours.
  18. Turn the mold over, remove the cake and remove the film.
  19. Decorate the carrot cake however you like. I garnished with coconut flakes and chocolate.
  20. Carrot cake with cookies, condensed milk, nuts and raisins is ready.
