Carrot cake with spices and whipped cream

A fantastically delicious carrot cake prepared according to this recipe is bright, tender, with a pleasant caramel flavor and a spicy aroma of cinnamon and ginger.

Ingredients

Directions

  1. Grate peeled carrots on a coarse grater. (If desired, cut off a few circles of carrots for decoration, cut out flowers from them and boil in sugar syrup.)
  2. Rinse the pan with water and combine 200 g of sugar and 60 ml of water in it without stirring. Put on medium heat and wait until all the sugar has melted. You don’t need to interfere, otherwise you will cause the sugar to crystallize and everything will seize into a lollipop!
  3. When the sugar syrup begins to turn an amber color, remove it from the heat. Don't interfere!
  4. Add soft butter to the caramelized sugar syrup (carefully, the mixture will bubble for a couple of seconds) and stir well until smooth.
  5. Add grated carrots to the caramel and boil for another 5 minutes over medium heat so that the mass does not boil. The carrots will become soft and the caramel will become translucent.
  6. Leave to cool.
  7. Turn on the oven.
  8. Beat eggs and 100 g of sugar with a mixer until white lush mass.
  9. Separately combine dry ingredients: sifted flour, ginger, cinnamon and baking powder. Mix well.
  10. Add dry ingredients to egg mixture, mix with a spatula.
  11. Add milk, mix first with a spatula, then with a mixer. The dough will be smooth and uniform.
  12. Add carrots in caramel to the dough, mix with a spatula.
  13. Line the bottom and sides of a baking dish (I have a 24 cm diameter form) with parchment. Pour the dough into the mold.
  14. Bake carrot cake in a preheated oven at 180 degrees for 40-50 minutes.
  15. Decorate the finished cooled carrot cake with cream whipped with powdered sugar. You can decorate the cake with carrot figures boiled in sugar syrup.
  16. Enjoy your meal!
