Carrot jelly is a delicious and healthy drink. The taste of carrot jelly turns out to be dessert and sweet, absolutely not a vegetable, with a slightly noticeable delicate sourness from the lemon. Good both hot and cold.

  2. 2. Wash the carrots, peel, and grate on a fine grater.

  4. 4. Pour water into a small saucepan and let it boil. As soon as the water boils - put the grated carrots. Let it boil, cover with a lid and reduce the heat. Boil 5 minutes.
  5. 5. Then strain the decoction through a fine strainer. Throw away the carrot pulp.
  6. 6. Pour the carrot broth into a saucepan, add sugar and let it boil again. In a thin stream, add lemon juice with potato starch diluted in it, stirring continuously. Warm the jelly for about a minute over low heat, not letting it boil.
