Recipe for carrot cake on kefir, the dough for which is prepared with the addition of orange and lemon zest, as well as dried cranberries.

  1. Prepare the necessary products for carrot-orange cake on kefir.
  2. Peel the carrots, wash and grate on a fine grater.
  3. Remove the zest from the orange and lemon using a fine grater.
  4. Turn on the oven, let it warm up to 180 degrees.
  5. Break eggs into a bowl and add sugar. Beat with a mixer.
  6. Then pour in kefir at room temperature. Mix again with a mixer.
  7. In portions, add flour to the liquid components, mixing each time.
  8. Simultaneously with the introduction of the last part of the flour, add softened butter.
  9. Add baking powder, cinnamon and a pinch of salt.
  10. Mix everything with a mixer so that there are no lumps.
  11. Add grated carrots, orange and lemon zest, as well as part of the cranberries to the dough, leaving a little to decorate the cake.
  12. Stir so that the carrots, zest and cranberries are evenly distributed in the dough.
  13. Cover the form with parchment. Pour the batter into the prepared pan and smooth out. Put some cranberries on top.
  14. Bake carrot-orange cake with cranberries in the oven, preheated to 180 degrees, for 45-50 minutes.
  15. Check the readiness of carrot cake on kefir with a wooden skewer or a toothpick. Allow the cake to cool slightly before taking it out of the mold.
  16. Cut the cake into portions and serve with tea.
  17. On top of the cake, you can sprinkle with powdered sugar, pour syrup or honey, it all depends on your taste.
