Cauliflower pizza with tomatoes and mozzarella

  1. Preheat the oven to 210 C. Grate the cauliflower on a fine grater or chop it in a food processor. Transfer the resulting mass to a towel and squeeze to remove excess liquid.
  2. Combine cauliflower, egg, parmesan, almond flour, garlic, Italian seasoning, salt and black pepper until smooth.
  3. Form the resulting dough into a circle with a diameter of 30 cm. Line a baking sheet with parchment paper, grease it with oil. Place the pizza on top of it and bake in the oven until golden brown for 20 minutes.
  4. Remove the pizza from the oven, sprinkle some of the cheese on top, then add the sauce and sprinkle with the cheese again. Place in the oven for 5-7 minutes until cooked through. Season the finished pizza with basil, salt and pepper.
