Celery soup with cheese

This vegetable dish turns out to be velvety, rich in taste and surprisingly aromatic.

  1. Chop the onion. Cut the potatoes and celery into small pieces.
  2. Heat oil in a saucepan over medium heat. Saute the onion for a few minutes until soft. Add celery and cook together for another 5 minutes.
  3. Put the potatoes with chopped thyme in the same saucepan, pour over the broth.
  4. Bring soup to a boil and reduce heat to low. Cook, covered, for about 20-25 minutes, until the vegetables are tender enough.
  5. Remove soup from heat and blend with hand blender. Season with salt, pepper, mix with grated cheese and serve.
