Chylbyr is a Turkish cuisine dish. It is a poached egg with garlic yogurt and spicy butter. The dish dates back to the 15th century and was prepared in the Sultan's palace. It was a favorite dish of Sultan Mehmed IV. The unusual combination of ingredients gives the dish a sour-spicy taste. The dish itself looks beautiful and appetizing.   1. Prepare the garlic yogurt first. Pour yogurt and garlic into a metal bowl or saucepan.
  2. Add salt and mix well.
  3. Pour 3 cm of water into a saucepan and put on fire.
  4. When the water in the saucepan is boiling, place a bowl of yogurt on top. While stirring, heat the yogurt in a water bath for 1-2 minutes.
  5. Transfer the finished yogurt to a plate.
  6. Now let's prepare the poached egg. Pour 3 cm of water into a saucepan and put on fire. When bubbles appear at the bottom of the pan, stir the water with a whisk in a circle to swirl the water and create a funnel. Break the egg into a cup and pour into the center of the funnel.
  7. Boil the egg for 2-3 minutes over low heat. Be careful not to let the egg sink to the bottom of the pot. To do this, stir the water periodically in a circle.
  8. Remove the cooked egg from the pan. Boil the second egg in the same way. Or, boil both eggs at once.
  9. Put the poached eggs on a plate with yogurt.
  10. Now let's prepare the hot oil. Heat a skillet over medium heat and place the butter in the skillet.
  11. Add olive oil.
  12. Mix well.
  13. When the oil starts to bubble, add the red pepper.
  14. Stir well for a minute and remove the pan from the stove.
  15. Pour the prepared butter over the dish. Stir butter with yogurt before use.
