Cheesecake with apricots

A layer of apricot jam gives the delicate cheesecake a bright flavor accent. This recipe is for cottage cheese cheesecake. Cheesecake baked in the oven.

Ingredients

  1. Prepare products for cheesecake with cottage cheese and apricots. Cottage cheese should be soft and homogeneous, without grains. Cookies can be used sugar, it is easier to crush. Leave the butter in advance at room temperature.
  2. Wash apricots, cut in half, remove pits.
  3. Pour half a glass of sugar to the apricots, add 2 tbsp. spoons of water and put on fire.
  4. Cook the apricots until the syrup thickens, about 20 minutes, over low heat, stirring constantly.
  5. Then puree the apricots with a blender and cool.
  6. Grind cookies into small crumbs. Add soft butter to the cookies.
  7. Grind the cookies with butter until a homogeneous crumb.
  8. Line a baking dish (20 cm in diameter) with parchment paper. Spread the cookie crumbs on the bottom of the mold and press down.
  9. Put the mold with the base for the cheesecake in the oven, preheated to 170 degrees, for 10 minutes, so that the cookies with butter are baked.
  10. Add eggs, remaining sugar and vanilla essence to cottage cheese.
  11. Rub with a blender.
  12. Add sour cream and grind everything together. The curd mass should become completely homogeneous.
  13. Spread a layer of prepared apricot jam over the cookie base. (Remaining jam can be put in a jar, put in the refrigerator and used for other dishes.)
  14. Then lay out the curd mass, smooth.
  15. Place the mold in the preheated oven. Bake cottage cheese cheesecake at 170 degrees for 40-45 minutes.
  16. After that, turn off the heat and leave the cheesecake in the oven with the door ajar for 20 minutes.
  17. Remove from oven, cool and refrigerate, preferably overnight. Chilled cheesecake will firm up and cut nicely.
  18. Delicious cheesecake with apricots is ready.
