  8. Gelatin pour 2 tbsp. tablespoons of water, leave for 10 minutes.
  9. Put the raspberries in a blender bowl, chop at high speeds.
  10. Transfer raspberries to a bowl, add sugar. Mix.
  11. Boil raspberry puree after boiling for 6-7 minutes, stirring, over low heat.
  12. After a while, strain the puree through a fine sieve to weed out all the bones.
  13. After straining, I got 350 ml of raspberry juice with sugar. Cool him down.
  14. Melt the gelatin in the microwave in pulses of a few seconds, do not bring to a boil. Pour gelatin into raspberry juice, mix.
  15. Transfer the cream cheese to a bowl, pour in the cream.
  16. Mix everything with a mixer.
  17. Partially add the raspberry-gelatin mass to the creamy mass and mix everything with a mixer.
  18. It turns out an airy and tender mass. Take a sample. If there is not enough sweetness, add a little powdered sugar to taste. I didn't add.
  19. Remove the mold with the base of the cheesecake from the freezer, fill with the prepared berry-creamy mass. Place the cheesecake in the refrigerator overnight.
  20. After a while, remove the cheesecake from the mold, decorate to taste. I garnished with raspberries and mint leaves.
