  1. Rinse the rice under running water until the water is transparent. Cook in unsalted water for 5-7 minutes. It should be half-baked. Remove from heat and strain.
  2. Vegetables can be combined according to your preferences. Cut the chicken into small pieces and fry in vegetable oil.
  3. Cut vegetables into small cubes. Add to chicken and fry a little. They should remain slightly moist.
  4. Add some finely chopped ginger and sesame oil to vegetables and chicken. Simmer for a couple of minutes and add rice.
  5. Add soy sauce and stir. If desired, you can add salt and freshly ground pepper. Put out another three minutes. The rice should turn out to be a little fried, crumbly, and a nice brownish color. Finally, you can add peas or corn. Put the chahan in bowls and garnish with roasted sesame seeds or fresh herbs.
