Chicken cutlets with potatoes fried in batter

Chicken cutlets according to this recipe are very tender and appetizing. For juiciness, in addition to onions, add grated potatoes to the minced meat. Also, in order to keep all the juices inside during frying, we dip the cutlets in batter, in which we replace the flour with cornstarch. Thanks to this, the batter turns out to be viscous, perfectly envelops the cutlets, providing them with a golden brown crust. Try to cook!

  1. Peel the onions, rinse and cut into small cubes.
  2. Heat 1 tbsp in a frying pan. spoon of vegetable oil and add a piece of butter. We spread the onion and fry over medium heat for 5-7 minutes, until soft and ruddy. Let it cool.
  3. Peel the potatoes, rinse and rub on a coarse grater directly into the bowl with the minced chicken. We mix.
  4. We wash the greens (I have parsley and dill), dry them and chop them.
  5. Add fried onions, herbs, mustard, salt and ground pepper to a bowl with minced meat and potatoes.
  6. We knead well.
  7. From the resulting minced meat, we form cutlets with wet hands (I got 15 pieces) and put them on cutting boards. You can wrap the boards with cling film, so the cutlets will not stick. We send the cutlets to the freezer for 20-30 minutes, so they will keep their shape well.
  8. Drive the eggs into a bowl, add starch and salt to them.
  9. Beat well so that there are no lumps.
  10. After a while, we take out the cutlets from the freezer. Heat the vegetable oil well in a frying pan, then make the heat lower than medium. Dip cutlets in batter.
  11. Put chicken cutlets with potatoes in batter in a pan and fry until golden brown, about 7-8 minutes on each side.
  12. Then cover the pan with a lid and bring the cutlets to readiness for another 7-8 minutes on minimal heat. Prepare the rest of the cutlets in the same way.
