Season the chicken breasts with salt and pepper. Heat a small amount of olive oil over medium heat and saute the chicken until tender. Cut into small pieces.
Place chicken, rice, finely chopped carrots, celery and broccoli in a large saucepan. Season with salt and pepper to taste, add chopped garlic and thyme and cover with water.
Bring to a boil, reduce heat and cook for 35-40 minutes until tender. Sprinkle with dill and serve.
